Begin by preheating your broiler on a low setting. While the broiler is warming, prepare a 9-10 inch stainless steel skillet by adding one tablespoon of broth and heating it over medium heat. This will provide a healthy base for sautéing your ingredients. Start by adding chopped onion to the skillet and sauté for about three minutes, stirring frequently to ensure the onion cooks evenly and becomes soft without browning.
Next, add crushed or minced garlic to the skillet. Immediately after, add the ground lamb or turkey. Cook the meat mixture over medium heat for about three minutes, breaking up any clumps with a spatula. This ensures the meat cooks evenly and combines well with the onions and garlic.
Once the meat is browned, add chopped kale and two tablespoons of broth to the skillet. Reduce the heat to low, cover the skillet, and allow the mixture to cook for about five minutes. The kale will soften and blend with the other ingredients, creating a flavorful base. Add a pinch of salt and pepper, and pour the eggs evenly over the mixture in the skillet. Cook the eggs on low heat for about two minutes without stirring, allowing them to firm up gently.
After the eggs have set, transfer the skillet to the broiler. Place it in the middle of the oven, about seven inches from the heat source. Broil for a few minutes until the top is lightly golden and fully cooked. Keep a close eye to prevent burning.
