Refreshing Watermelon Punch
This Watermelon Punch is perfect for summer gatherings, parties, or holiday celebrations. It’s light, fruity, and visually stunning when served in the watermelon shell. This recipe yields 10 to 12 servings.
Ingredients:
- 1 cup sugar
- 1 cup water
- 1/2 small, evenly-shaped watermelon
- 1/4 cup brandy
- 1 can (12 oz) lemon-lime soda
- Ice cubes
- 1 teaspoon shelled pine nuts
Instructions:
- Prepare the sugar syrup: In a small saucepan, combine the sugar and water. Bring to a boil, stirring occasionally until the sugar dissolves completely. Remove from heat and let the syrup cool to room temperature.
- Prepare the watermelon: Cut the watermelon in half. Using a melon baller, scoop out the flesh into small, round balls. Discard any seeds you encounter. Pour the cooled sugar syrup over the watermelon balls to sweeten them.
- Extract juice: Scoop the remaining watermelon flesh and place it in a clean cloth. Squeeze to extract the juice, making sure no pulp or seeds remain.
- Combine ingredients: In a large bowl, mix the watermelon balls, fresh watermelon juice, and brandy. Chill this mixture in the refrigerator until ready to serve.
- Prepare the watermelon shell: Cut the upper edge of the hollowed watermelon in a saw-tooth design to create a decorative punch bowl.
- Assemble the punch: Just before serving, pour the chilled watermelon mixture into the prepared shell. Add the lemon-lime soda and ice cubes. Stir gently to combine.
- Garnish: Sprinkle the top with shelled pine nuts for added crunch and a festive touch.
