Hearty Split Pea Soup with Vegetables
This split pea soup is nutritious, filling, and packed with flavor. It’s perfect for a cozy lunch or dinner and is easy to prepare with simple ingredients.
Ingredients:
- 1 clove garlic, minced
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 2–4 tablespoons Bragg Liquid Aminos (or soy sauce)
- 6 cups water
- 1 cup split peas
- 1 cup grated carrots
- 1 potato, chopped
- Salt and pepper, to taste
Instructions:
- Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Cook for 2–3 minutes until fragrant and slightly softened.
- Add seasoning: Stir in the cumin and 2 tablespoons of Bragg Liquid Aminos, blending well with the garlic and onion to release the flavors.
- Cook the peas: Pour in 6 cups of water and add the split peas. Bring the mixture to a boil and then reduce heat to a gentle simmer. Cook uncovered for 2 minutes, then remove from heat. Cover the pot and let it sit for 1 hour to allow the peas to soften.
- Add vegetables and simmer: After soaking, add the grated carrots and chopped potato to the pot. Return to low heat and simmer, covered, for about 2 hours, stirring occasionally to prevent sticking. The vegetables and peas will cook down to a creamy, hearty consistency.
- Adjust seasonings: Taste the soup and adjust with additional Bragg Liquid Aminos, salt, or pepper as needed.
