This transformation happens because of tiny organisms called yeast cells, which play an important role in the process of making wine.
Before the invention of the microscope, people did not understand the science behind fermentation. They could see that fruit juice changed into wine over time, but they did not know how or why it happened. Because of this mystery, many believed that a magical or mystical force was responsible for the transformation. Today, we know that yeast consumes the natural sugars in fruit juice and converts them into alcohol and carbon dioxide. This natural chemical process is known as fermentation.
In simple terms, wine is the fermented juice of fruits. Grapes contain the perfect balance of sugar, acidity, and flavor needed to produce high-quality wine. The most important grapes used for winemaking come from the species known as Vitis vinifera. Wines made from these grapes are considered the standard against which other fruit wines are judged.
The complete process of making wine is called vinification. This process includes several steps, starting from the harvesting or picking of the grapes. After the grapes are collected, they are crushed to release their juice.
Grapes that belong to the Vitis vinifera family have a long history in winemaking. They are believed to have descended from wild European grapes. Over time, winemaking techniques have improved, but the basic process has remained largely the same.
