In a small saucepan, combine the carob powder and water. Place the saucepan over low heat and bring the mixture slowly to a boil. Stir continuously while heating to prevent the carob from sticking to the bottom of the pan or scorching. Gentle and steady stirring helps the mixture become smooth and evenly heated.

Once the mixture begins to boil, add the honey and peanut butter to the saucepan. Continue stirring well so the ingredients blend together completely. Allow the mixture to cook for about five minutes over low heat. During this time, the syrup will gradually become smooth and slightly thicker. Make sure the heat stays low to avoid burning the mixture. When finished, the syrup should have a rich texture and a glossy appearance.

In a large mixing bowl, combine the wheat germ, oats, milk powder, shredded coconut, cinnamon, and orange rind if you choose to include it. Mix these dry ingredients thoroughly so that the flavors are evenly distributed throughout the bowl. The orange rind is optional but adds a light citrus aroma that complements the sweetness of the recipe.

Next, pour about one cup of the warm carob syrup over the dry ingredients. Stir the mixture slowly until everything is well coated. Add only enough syrup to create a soft, pliable dough that can easily be shaped by hand. If extra syrup remains, store it in a covered container in the refrigerator.

Once the dough is ready, pinch off small portions and roll each piece between your palms. Shape some pieces into tubes about two inches long, roughly the thickness of a fountain pen, and taper one end so they resemble small baseball bats. Roll the remaining dough into marble-sized balls to create bite-sized treats that are easy to serve and enjoy.
